Penelope Cooper Series Madagascar is Batch 01 of Penelope Bourbon's newest cask-finished release, built from the distillery's Four Grain Straight Bourbon (corn, wheat, rye, and malted barley) under master blender Danny Polise. The bourbon rests roughly four years before finishing three to four months in Cognac casks, a step founder Daniel Polise says layers in candied fruit and spice while keeping the base bourbon's vanilla and caramel core intact. Bottled at 99 proof (49.5% ABV), it opens with vanilla bean, brown sugar, and candied citrus on the nose, moving into caramel, peanut, cinnamon, and vanilla wafer on the palate, with a finish of candied fruit, light spice, and marshmallow warmth. Part of the same Cooper Series lineup as Havana, Rio, and Riviera, Madagascar is best enjoyed neat or over a single large cube to let the Cognac finish fully open up.
