Crafted by Melly Barajas and her dedicated team of women distillers in Valle De Guadalupe, Jalisco (NOM 1533), La Gritona Reposado represents the pinnacle of artisanal tequila production. Only fully matured agave plants—aged 8-10 years in the iron-rich red soil of the Jalisco highlands—are selected at peak sugar content and processed within 24 hours of harvest. The cooked agave undergoes a meticulous two-stage process: steam-cooked for 24 hours in thick-walled earthen ovens, then rested another 24 hours before crushing. Natural fermentation occurs in open steel vats over 8-12 days, guided by ambient temperature, followed by two separate distillations in copper-coil stills. The resulting blanco is then rested for six months in reused American whiskey barrels—sourced from Jack Daniels and Balcones—which are intentionally stripped of excess oak and color to soften the spirit without masking its essential character. Completely additive-free and produced entirely under one roof by a small staff of local women, every step reflects an unwavering dedication to quality. Even the spent agave finds purpose, donated to local farmers as cattle feed, embodying a philosophy of respect for both craft and community.
