Burgess Cellars' estate on Howell Mountain was planted in the 1870s by Swiss-Italian immigrants, and this southwest-facing, 27%-slope vineyard remains the source of this dense, concentrated Cabernet Sauvignon. The soils here are densely compacted volcanic ash studded with large granitic stones, which contribute real distinctiveness to the fruit. The wine opens with aromas and flavors of confectionary blackberry and stewed cassis, rich and full without becoming heavy. That lush fruit is brought into balance by high-toned herbal aromatics of mint, sage, and sweet tobacco, adding real complexity to the profile. The distinctively thick-skinned Cabernet Sauvignon grapes grown on this mountain site provide a long, velvety finish that sets this bottle apart from valley-floor Cabernets. It's an excellent match for beef, lamb, aged cheeses, smoked meats, venison, or a dark chocolate dessert.
